Ginger

Maple syrup
2 Oz
Cold coffee
1 Oz
Milk
For the cinnamon syrup

White sugar

For the cocktail
In a shaker, put the ginger pieces and the maple syrup. Use a muddler to crush this mix gently and pour the other ingredients. Fill it up with ice cubes and shake well for 8 to 10 seconds. Pour out all the mix into a big old-fashioned glass.

For the cinnamon syrup
Bring the water, the sugar and the cinnamon to a boil. On low heat, let it simmer for ten minutes, stirring once in a while. Refrigerate for an hour. Strain it out before using it for your cocktails.
