Skewers of grilled fruits caramelized with brown sugar, topped with a honey and orange blossom caramel.
Feel free to use whatever fruits you prefer.

Honey and orange blossom water caramel

Grilled fruits skewers
Peel and cube the mangoes.
Peel the pineapple, quarter from top to bottom and remove the core. Cube the flesh.
Cut the starfruit in cubes.
Quarter the peaches to remove the pit. Then cut each quarter into 2-3 pieces.
Remove the stem from the strawberries.
Assemble the skewers starting with the strawberries and finishing with the starfruit.
Put the brown sugar in a plate and roll the skewers in the sugar. Set aside in the fridge.

Honey and orange blossom water caramel
In a small sauce pot bring the honey to a boil, add the butter and remove from the heat, then add the butter. Once melted and incorporated, add the lemon jus and orange blossom water, mix and keep warm.

Cooking and plating
Grill the skewers using indirect heat on your BBQ for roughly 5-7 minutes or until the fruits caramelize lightly. Serve warm with a thread of the honey orange blossom syrup.
