Aji amarillo chili paste is a staple of Peruvian tables, used as a condiment in dishes to add heat. You can prepare a good quantity of it, it will keep for several days in the refrigerator. If you can't find the aji amarillo pepper, substitute a jalapeno pepper or a yellow pepper.

Vegetable oil
1 Pinch(es)

Preparation time: 15 min

  • Paste

    If you use dry peppers, soak them for 12 hours in cold water. If you are in a hurry, 20 to 30 minutes in hot water, but the result is worse.

    Mix (blender) the peppers with the oil and salt until you obtain a smooth paste. If you don't eat too spicy, remove the white parts and the seeds.
