Goat cheese, phyllo and pistachio crisp, chives, sésame

In the spirit of an Italian dessert, here is a savory version with fresh goat cheese.

Note

Be careful with the salt in this recipe, depending on the goat cheese you choose, it may be salty enough.

For an appetizer, serve the rolls with a green salad.

Phyllo paste

Phyllo dough
100 Ml
Melted butter
1 Tbsp
White and black sesame seeds

Cream of fresh goat cheese

150 Gr
Fresh goat cheese
75 Ml
35% whipping cream
0.50 Unit(s)
French shallot
0.25 Bunch(es)
Chives
  • Butter
  • Salt and pepper

Preparation time: 45 min

Preheat your Oven at 400 °F

  • Setting up

    Gently melt your butter to separate the whey from the fat and obtain a clarified butter (otherwise use Ghee or Ghi).

    Finely chop the chives and the shallot.

    Finely chop the fresh pistachio.

  • Phyllo paste

    Gently unroll the phyllo roll, place a slightly dampened cloth on top.

    Take a first sheet, place it in front of you, brush it with clarified butter (ideally), superimpose a second sheet and repeat the operation with the butter.

    Cut the sheet into strips of 4 to 5 cm wide, place your stainless steel roller on the base, roll the strip of phyllo dough around the cylinder.

    Sprinkle the roll with sesame seeds and place it on a baking sheet covered with parchment paper. Repeat the operation as many times as you have rolls to make.

    Place the baking sheet in the hot oven for 4 to 6 minutes, watching for coloring depending on the strength of your oven.

  • Goat cheese cream

    Ramollir dans un bol le fromage de chèvre à l'aide d'une Maryse (spatule ou cuillère en bois).

    Ajoutez-y la crème, le sel et le poivre, fouettez le mélange de manière à obtenir la consistance souhaitée. Ajoutez délicatement la ciboulette, assurez-vous de l'assaisonnement.

  • Plating

    All you have to do is stuff the tubes with phyllo and sesame dough.

    Using a pastry bag, fill the tube at each end. Finish by dabbing each end in the chopped pistachio.

    Place on a serving dish.
