Thin apple tart, salted butter caramel and vanilla ice cream scoop |
Crispy puff pastry topped with thin slices of Golden Delicious apples, topped with a drizzle of butterscotch sauce and a scoop of vanilla ice cream.
To prevent that the caramel crystalise when you add the butter and cream, make sure you temper them in advance or reheat them a few minutes in the microwave. This will reduce the risk of thermal shock.

Preheat your four at 400 °F

General preparation
Cut apples in half. Remove the heart. Slice them thinly.

Thin tart preparation
Cut portions of puff pastry into rectangles or other shapes. Brush with beaten egg. Coat the inside with apple sauce and arrange the apple slices nicely. Place pies on a baking sheet lined with parchment paper and bake in the oven for about 20 minutes. The dough should become golden brown.

For the salted butter caramel
In a small saucepan, melt the sugar with a little water over medium heat. Once the sugar has completely melted, you will have to wait until an amber color appears without mixing. Lower the heat and add the salted butter and the cream in a drizzle and mix well. Cook 1-2 minutes until the texture is homogeneous.

To serve
Place the tart on your plate and place a scoop of vanilla ice cream on top. Pour a little salted butter caramel drizzle on top.
